 - Ibi Gold Junmai Daiginjo Muroka Nama Genshu 720ml
PRICE: $680/@

Production area: Gifu Prefecture
Brewery name: Sugihara Shuzo
Ingredients: 100% Ibi no Yugi rice
Polishing ratio: 40%
Alcohol content: 16%
Volume: 720 ml

Features: This is a special limited edition sake released for the Olympic year. Upon opening the bottle, the aroma is sweet and fruity, reminiscent of melon and banana, with a slightly cloudy body. The taste is rich yet not overly sweet, with a light, smooth sweetness that flows gently across the palate. The acidity and bitterness are both well-balanced. The finish is neither too long nor too short, fading gently at the right moment. This rich sweetness is a rare and precious quality that is hard to find in other wines. It is more like a dessert wine to enjoy after a meal rather than a wine to pair with food.

Sugihara Shuzo is a sake brewery founded in 1892 (Meiji 25) in Ono Town, Ibi District, Gifu Prefecture. It is said to be ‘Japan's smallest sake brewery’ and is a family-run micro-enterprise. With an annual production of only 60 koku, it is referred to by sake enthusiasts as a ‘hidden gem,’ and its price once skyrocketed! However, its craftsmanship is exceptional, making it highly sought after and even one of the most coveted brands in the sake industry.

Mr. Keiki Sugihara, the fifth generation of the Sugihara family, inherited the family business at the age of 28 when it was on the verge of collapse. He created the ‘Shamei’ brand in an attempt to turn things around. The name ‘Shamei’ combines the homophonic characters of the place name “Ibi” with the meaning of ‘shooting out fine wine.’ Mr. Sugihara sought to ‘use local water and rice to create sake suited to the region,’ collaborating with Mr. Takahashi Hiroki, an expert from the Gifu Prefectural Agricultural Experiment Station, and local contracted farmer Mr. Matsuhisa Hidetoshi to develop their own sake rice variety, ‘Ibi no Yū.’ They continuously refined their brewing techniques in pursuit of the ideal. To this day, only Sugihara Shuzo continues to use the ‘Ibi no Yū’ rice variety. ‘Shimei,’ with its gentle sweet aroma, quickly captivated sake enthusiasts with its rich, sweet flavour. Combined with its extremely limited production volume, it has earned the reputation of being a ‘rare, elusive sake.’
