The classic wine in the "Wind Forest" series has been popular in the market since its launch in 1998. It is brewed using Kaze no Mori's signature rice variety, Akizuho. The "657" here refers to the 65% polished rice ratio + No. 7 yeast. It has aromas of white grapes, fresh fruits, lactic acid, nuts, and melons. The mellow body of the wine is slightly carbonic, and it has a sweet and sour aftertaste of dark citrus fruit. After opening the bottle and leaving it for a while, the body of the wine will change and form a different taste, making it suitable for pairing with foods with stronger flavors.

Aburaga Shuzo, located in Nara Prefecture, initially sold oil and was named "Aburaya Chobei". In the 4th year of Kyoho (1719), it started brewing wine and changed its name to "Aburaga Shuzo" for more than 300 years. history. The current Zang Yuan, Yamamoto Nagahei, is the thirteenth leader. He agrees with the concept of "valuing tradition" insisted by his predecessor Zanggen, but he also believes that sake brewing needs innovation. Therefore, after he took over in 2007, he brought in technology. "Gazenomori", Aburaga Shuzo also has two inscriptions, namely the Nara Muromachi style "Nara Sake" and the "Takacho" brewing method using the "bodhi indigo" brewing method.

In order to realize the ideal of "changing old traditions to create new traditions", Aburaga Shuzo named it after the nearby place "Feng no Mori Pass" and created the name "Feng no Mori" in 1998. It is rarely brewed using deep underground ultra-hard water from the Kongasagi Mountains. The water hardness can reach 200mg/L. The rich minerals (especially magnesium) can provide sufficient nutrients for the yeast, which can increase the fermentation and make the flavor richer! ! It is very representative in the entire Nara Prefecture.

The brewery is committed to using Jigen sake rice to brew sake (local sake). The sake is good at using different rice polishing steps to express the original characteristics of the rice. For example, the ultra-low-temperature technology of patented "Akitsuho" and "Akitsuho" is developed to create wines with high freshness and rich aroma, among which the brewed rice "Akitsuho" is mainly used. "Akitsuho" is also Nara's local edible rice. In addition to "Akitsu Sui", wines made from the rice variety "Rouyefeng" are also quite popular. It is worth mentioning that the products launched by "Feng no Mori" do not use special names to indicate the wines, so even if they meet the standards, they will not be labeled "Junmai Daiginjo" or "Ginjo". All products in the series are listed as "Junmai Nara Sake".
