實試筆記: 鳥黑深紫酒色，一打開已經聞到朱古力、深烤咖啡豆、紫羅蘭香氣；味道呈現朱古力醬、成熟黑李、黑胡椒、無花果果醬等等，悠長餘味，重重重點係甜而不膩 男士都接受到既甜度。
額外小建議：有別於一般甜點酒，呢款Recioto室溫品嚐味道最佳，飲唔哂放返入雪櫃，兩星期保鮮期。







Cantina Valpolicella Negrar創立自1933年，是釀造精品Amorone紅酒的著名酒莊，始終堅持以傳統釀酒方式提煉最優質佳釀。，以純天然方法增加口感濃郁度及複雜度，採Recioto 用意大利獨有的枯藤法釀酒，造成口感醇厚，餘韻悠長，層次豐富的獨特味道。成熟健康的葡萄約在九月初採摘，放在竹架、盒子、平臺或木盒上低溫烘乾約100日，有時甚至持續6個月或以上，讓釀酒的風乾葡萄喪失三至四成30% - 40%水份，令酸度與糖分的比例達到最佳，帶出更複雜、更濃縮的風味，釀出更深色、單寧豐富、口感濃稠飽滿、香氣馥鬱的葡萄酒。再把酒放在木桶內陳年。風乾葡萄糖分濃度提高，發酵成酒精後，酒精濃度可達至15%至17%。以上便是整個Appassimento的風乾過程。



Recioto早已存在於羅馬時代，在當時能吃到糖是件可遇不可求的事情，通常在水果、蜜蜂攝取，而能夠喝上甜飲除非你是貴族，所以一直百姓趨之若鶩。
Recioto葡萄酒在發酵結束時仍會保留一些糖分，因此便會表現出甜甜的口感——其殘糖含量可以達到50g/L或更多



原來Amarone 是 Recioto的“失誤”，相傳在某一日不小心將Recioto該有的糖分完全發酵變成酒精度更高的乾型葡萄酒，而這個美好的失誤造就如今的Amarone葡萄酒名氣比Recioto大得多，成為Valpolicella地區最具代表性的葡萄酒。在早期酒標上會出現Recioto Amarone Della Valpolicella，因為當時Amarone還是活在Recioto的陰影下，還未獨立出來，隨後到1968年，Recioto被授予DOC法定產區級別，成為Recioto Amarone Della Valpolicella DOC / Recioto Della Valpolicella DOC，直到1990年Amarone才真正解脫
