The estate's history dates back to 1851. That year, the Hayot family inherited the title of Count from Myre-Mory, becoming the new owners of Château Romer in Fargues. After renaming the estate Château Romer du Hayot, the family has remained deeply committed to the Sauternes and Barsac regions. In 1855, the estate was classified among the Sauternes & Barsac Cru Classé, earning the distinction of Second Growth (Deuxièmes Crus). The classification featured only one Premier Grand Cru Classé, eleven Premier Crus, and fifteen Second Growths.
The vineyards of Château Romer-du-Hayot cover approximately 11 hectares. The soil within the vineyards is rich in gravel and sandy loam. Among the primary grape varieties cultivated, Semillon accounts for 75%, with the remainder consisting mainly of Sauvignon Blanc. The average age of the vines is 35 years.
Additionally, the estate produces a second wine, Château Andoyse du Hayot. The vineyards are situated in the heart of Haut-Barsac, Bordeaux, France, on brilliant clay and limestone soils, with vines averaging 35 years of age. The vineyard spans over 20 hectares. Semillon dominates the planting with 90%, while Sauvignon Blanc accounts for the remaining 10%. The second label similarly honors traditional methods for producing noble rot wines.
