Isojiman Sake Brewing Co., Ltd. has a spring limited ceremony once a year, and the brewery adopts the Akitsu region's ``Shobudani'', special quality Yamada Nishiki, home-grown yeast, Japanese soft water, and small compound Oigawa underground water brewing. It has a refreshing floral aroma, ripe Fuji apple, grape aroma, prominent rice aroma, and a refreshing mouthfeel.
Isojiman Sake Brewery Co., Ltd., located in Yaizu City, Shizuoka Prefecture, was founded in 1830. It is an old sake brewery with a history of 180 years. It was originally a famous local landlord. It started by providing land to farmers for cultivation and trading rice for sake. Later, it developed into a series of rice-related processing industries, and sake brewing was one of its side businesses. After World War II, Japan's rapid economic growth led to the booming sake market, and Isojiman Sake Brewery Co., Ltd. also developed into one of the best sake breweries in the local area.

The philosophy of the brewery is “not to disappoint the trust of wine merchants and wine lovers”. "The conditions for brewing sake are always different." The quality and characteristics of the harvested rice change from year to year, and the temperature and humidity change from year to year and from day to day. The product is brewed using the famous water "Oi River Fushirakusui" from the Southern Alps, and carefully selected Yamada Nishiki from the Special A area of Hyogo Prefecture. Brewing is always considering how to maintain quality and adopt any new technology or invest in different equipment. In 2010, the brewery participated in the "International Wine Challenge" held in London for the first time and won gold medals in the sake section in both the "Junmai Sake" and "Junmai Ginjo Sake/Junmai Daiginjo" categories.
