【Kamenoi Brewery】
Kamenoi Sake Brewery is a century-old brewery located in Yamagata Prefecture, Japan. It was founded as early as the 8th year of the Meiji era (1875). It initially launched its sake products under the name "Kamenoi", which is itself a famous local sake in Yamagata Prefecture. In order to enter Tokyo, the fifth generation kuramotokanto (winemaker) Toshiharu Imai launched "Kudokiki Uete Jr." with a Ukiyo-e as the wine label. The term "kudoki jote" originated from the Japanese Warring States Period. It refers to military commanders who are eloquent and can persuade enemy generals, lords or subjects with words rather than force. This ability or charm that can convince anyone with words. Ukiyo-e is also used on the wine label to enhance the style of the Edo period. The products in this series have unique flavor, rich aroma, refreshing and soft taste and gorgeous wine quality. It also ranked second in the 2022 Sake Time Japanese Sake Yamagata Prefecture Ranking, second only to the 14th generation.

The brewery mainly uses "Ogawa (No. 10) yeast" to make wine. The fifth generation Kuramoto, Mr. Toshiharu Imai, fell in love with this yeast when he was mentored by Dr. Chikara Ogawa (the discoverer of Ogawa yeast). Ogawa yeast is characterized by low acidity and a refreshing taste, and can also fully bring out the sweet floral and fruity aroma of sake. The sixth generation Kuramoto Kantoshi Imai Toshinori was the son of the fifth generation Kuramoto. Like many young brewers who took over brewing, he entered the brewing department of Tokyo University of Agriculture when he was in college. Compared with his father's traditional brewing style, he mainly adopts a new style with heavy fruitiness and sweet fragrance.
