【Cabernet Sauvignon brewed using air-dried grape method】
The series is named after the story of American detective Frank Serpico. In the 1960s, there was serious corruption in the New York City Police Department. He did not follow the crowd and broke the rules, and was desperate to expose the corruption. The wine is made using the air-dried grape (Apsismento) method to make Cabernet Sauvignon. The wine, like Frank Serpico, breaks the mold.
Intense fruity flavors of blackcurrant and ripe blackberries, with hints of dark chocolate, coffee and a hint of licorice. The caramel-like smooth taste of this wine is wrapped in fine and firm tannins, coupled with juicy acidity and a slight salty taste at the end, which is quite balanced.

The 2008 Serpico was made in the Amaronemethod from grapes picked at around 12.5% and semi-dried slowly, finishing ataround 15% alcohol. In 2008 it managed to side-skirt the heat as it was pickedearly. It was matured for 9 months in 100 % new barriques, 90% French. Very deepgarnet-purple colored, it gives pronounced notes of creme de cassis, Christmascake, plum pudding, anise, cassia and nutmeg. The rich, full-bodied flavors are very spicy on the palate, off-set by crisp acid and medium-firm fine tannins, finishing with persistent, somewhat savory flavors of mincemeat and marmitetoast.

Dark, brooding aromas of blackberry, mulberry, sweet spice, dried herbs, cocoa powder and bramble. Full-flavoured, dark fruited, powerful and structured. Plum, blackberry and dark cherry are at the core and the tannins and acidity bring a decent amount of structure, savouriness and serious mouth-feel. Big time cabernet.

Owner and founder of the winery - Frank Mitolo and his family business ComitFarm are the largest potato and onion packaging and transportation companies in the southern hemisphere. In 1999, Frank Mitolo and his wife Simone Winery founded Mitolo Winery, which is a fairly young Australian winery. Frank Mitolo places special emphasis on the individuality of each grape variety and believes that existing mainstream flavors should be abandoned: to break the stereotype of Australian wine. The style of each wine is direct and obvious. The winery and vineyards are located in McLaren Vale, a complex wine region with a Mediterranean climate, complex soils and varying altitudes, ideal for growing many international varieties as well as many native Italian varieties. Almost all of Mitolo's grapes come from the Sellicks Hill and Aldinga vineyards in the production area. Sellicks Hill has fertile soil and plenty of sunshine. Aldinga is close to the coast and is influenced by the cool sea breezes of the bay. These excellent terroirs give the wine a very rich fruit flavor while retaining good acidity.

In addition to McLaren Vale's famous local Cabernet Sauvignon, Shiraz and other international varieties, the wines grown in the winery also include native Italian varieties Sangiovese, Montepulciano and Sagrantino.
