This wine from Chablis Premier Cru Beauroy is full of lively floral and mineral notes. There's a hint of oak, and just the right amount of apple and citrus. The fruity and mineral flavors go well with the chamomile aroma. The finish is crisp and refreshing, with a hint of salty umami.

【Chablis Beauroy】

Beauroy is a 64-hectare, south-facing first-class vineyard on good terrain, located on the left bank of the Serein River. The soil contains clay and limestone, as well as numerous fossil oysters. The fog has a great impact on the local area. In 1978, fog caused huge disasters in the area. After the disaster, an artificial lake was built under the Cote de Savant to provide sufficient water for the vineyards and to protect them from spring frosts through overhead irrigation. Things have improved dramatically since then.

Agnès and Didier Dauvissat was founded in 1987 and is located in Beine, near Chablis. It is a relatively new local winery owned by founder Didier and his son Florent. Although Didier Dauvissat is distantly related to Vincent Dauvissat, known as the Chablis wine king. However, Dauvissat started from scratch. When planning to build a winery, he found suitable grapevines, purchased equipment and built a wine cellar on his own, insisting on following his own path!

It has more than 10 hectares of vineyards located in Petit Chablis, Chablis, Beauroy First Class Garden and Florent First Class Garden. Most of the vineyards have Kimmeridgian (Kimmeridgian) soils composed of clay, limestone, marl and small oyster fossils, and receive ample sunlight, producing Chardonnay wines full of energy, passion and minerality.
