2021 is cooler overall, and the wines are more elegant and fine-grained, with less angular tannins...the black fruit tastes ripe and spiced, without any hint of greenness. Definitely has potential to grow in bottle. The tannins are still there and should be more mellow if stored in the bottle for a while. Drink with the 2020 and 2018 vintages, 2021 will be even more elegant

Living Soul Winery Almaviva is located in the Maipo Valley production area of Chile. It was established in 1997 by the French Wudang Winery Chateau Mouton Rothschild and the famous Chilean winery Concha y Toro.
"Almaviva" means "living soul". Literally, "alma" means "soul, life" in Spanish, so it is not difficult to understand when it is translated into "living soul". How did Living Soul Winery get its name? It is said that Chile has a unique climate, water and soil, and is a paradise for wine making. However, the wine produced cannot get rid of the "cheap" label. Concha y Toro Winery is determined to break this strange theory. They clearly realize that there is no problem with the quality of Chilean wine, but what is missing is the finishing touch. Therefore, Concha y Toro Winery invited Baron Philippe de Rothschild, the unique "soul figure" in the red wine industry, to come to Chile to jointly produce world-famous wines. The two parties quickly reached an agreement and created a living winery. Soul Winery.

The vineyards of Living Soul Winery are located at a higher altitude in Mai Po Valley, covering an area of 60 hectares. The grape varieties grown in the garden include Cabernet Sauvignon, Carmenere, Cabernet Franc, Merlot and Petit Verdot, with Cabernet Sauvignon leading the way. In terms of climate, because the altitude is as high as 650 meters and the vineyards are affected by the Andes Cordillera, the climate here is very cool with a large temperature difference between day and night, which prolongs the growth period of the grapes and is conducive to the accumulation of sugar and flavor substances. The soil in the garden is relatively poor and has various soil types, including loamy clay, sandy loam, gravel and rock. The soil is well-drained and rich in minerals, giving the wine a balanced and elegant style.

The winery uses manual methods to harvest and select the grapes, and then carries out the process of removing the stems and breaking the skins. The winery will soak the skins to obtain more color and flavor. The alcohol fermentation process is completed in stainless steel tanks. The winery also places the grape skins and grape seeds in a basket press for gentle pressing, adding flavor to the finished wine. After fermentation, the wine will be placed in new French oak barrels for maturation. The maturation time is about 16-18 months. Egg whites are used for clarification before bottling.

Almaviva also makes a second wine, called EPU.
EPU means "two" in the language of the Mapuche people, one of the major indigenous cultures in southern Chile. EPU is modeled on the second wine of the most prestigious Bordeaux chateaux, produced in very limited quantities but with many of the characteristics of Almaviva.
Rich fruit flavour, layered with blueberry, blackberry, floral and spicy aromas, smooth texture and fine tannins. This second wine shows a more classic Bordeaux appearance, while Almaviva is more representative of Chilean style.
