Founded in 2017, Domaine Arnaud Baillot is a remarkably rare and emerging winery. Owner Arnaud Baillot majored in international trade and wine trade during his studies and, after graduation, established several distributors in Burgundy, making him a true business prodigy. As his business flourished, Arnaud's reputation in Burgundy grew, forging strong relationships with many wineries that went beyond mere trading partnerships. This led him to meet his current wife, Laure Van Canneyt, a member of the Hudelot-Noëllat family. Consequently, Arnaud shifted his focus from wine trading to winemaking, establishing the winery with his wife.

In Burgundy, where the concept of "heaven, earth, and man" is paramount, the vineyard is often considered the most crucial element. A renowned Burgundy winemaker once said, "80% of the wine is made in the vineyard." Leveraging his extensive business network, Arnaud personally visited numerous wineries and engaged in discussions with winemakers. Not only does Arnaud benefit from his wife's family's resources, inheriting numerous plots of land from Domaine Hudelot-Noëllat, including the Grand Cru vineyard of Romanée-Saint-Vivant and the Premier Cru vineyard of Les Suchots, but he also has close ties with the Gaunoux family of Meursault. The Gaunoux family has cultivated the Côte de Beaune since the 16th century, owning many coveted plots that provide excellent grape sources for Arnaud Baillot, resulting in exceptional quality for the winery's white wines.

Arnaud maintains his business-minded attention to detail in winemaking, personally overseeing every step, from grape sourcing and the winemaking process to oak barrel selection. Even details such as the barrel manufacturer, timber, and origin must be inspected by him. The winery exclusively uses oak barrels from François Frères, the DRC's official cooperaget, and Chassin, a renowned Burgundy cooperage. More importantly, he benefits from the experienced guidance of his brother-in-law, Charles van Canneyt. Charles van Canneyt, hailed as a Burgundy superstar by Allen Meadows, was the driving force behind Domaine Hudelot-Noëllat's rise to prominence, earning it accolades comparable to top-tier wineries like Domaine Leroy. With this master's support, Arnaud Baillot winery has garnered international attention in less than five years!
Steen Öhman, a writer for the professional Burgundy wine website Winehog.com, was so impressed after tasting Arnaud Baillot's wines that he traveled from Copenhagen, Denmark, to visit the winery in Burgundy. He described Arnaud Baillot's wines as "modern Burgundy style," meaning they don't deliberately follow the current trend of emphasizing natural wines, but rather enhance the wine's finish through the judicious addition of sulfur dioxide.
