Château Ausone is located in the Saint-Emilion appellation on the right bank of Bordeaux, France. It is one of only four Saint-Emilion Premier Grand Cru Classé A (Saint-Emilion First Growth A) estates in the appellation and one of the eight prestigious estates of Bordeaux. In 1955, Saint-Emilion established a classification system for its wines, dividing them into three tiers based on the Saint-Emilion Grand Cru classification: Grand Cru Classé, Premier Grand Cru Classé B, and Premier Grand Cru Classé A. This classification system is reassessed every ten years, meaning that estates must consistently maintain their standards to either advance or retain their status. In the latest 2012 classification, only four estates were rated as Grand Cru Classe A, representing the highest standard in Saint-Emilion. These are Chateau Cheval Blanc, Château Ausone, Château Angelus, and Château Pavie. Prior to 2012, only Château Cheval Blanc and Château Ausone were classified as Premier Grand Cru Classé A estates. In 2021, Château Ausone unexpectedly announced that it would no longer participate in future classifications. While this decision will not harm Chateau Ausone's reputation among consumers, it does represent a step backward for the classification system. Chateau Cheval Blanc also refused to participate in the future classification on the same day. Shortly thereafter, Chateau Angelus also declined to participate. Starting with the 2022 vintage, Chateau Ausone will no longer label its wines as Premier Cru Classe A. Chateau Ausone's long history of viticulture dates back to the Roman period, approximately two thousand years ago. It is said that the current location of the estate was once the residence of the renowned Roman poet Ausonius. Ausonius was born in Bordeaux in 310 AD. He was a man of exceptional intelligence, achieving prominence in academia, politics, and literature, and was highly revered by his contemporaries. His poetry enjoyed a high reputation during the Gallo-Roman period, and he was a pioneer in praising Bordeaux and Bordeaux wine in his poetry. The name of Chateau Ausone was chosen to commemorate this outstanding poet and wine enthusiast. Since the 14th century, Château Ausone has been owned by only three families, a rarity among Bordeaux vineyards, which often change hands frequently. These three families are the Lescours family, the Jacques de Lescure family, and the Vauthier family. Today, Chateau Ausone is managed by Alain Vauthier, the 11th generation of the Vauthier family, and his eldest daughter, Pauline Vauthier.

The vineyard covers an area of 7.25 hectares, facing east or southeast, allowing it to fully enjoy the sun's rays while effectively blocking northwest winds. Additionally, the vineyard is located near the Dordogne River, benefiting from its moderating influence to create an ideal microclimate for grape growth. The winery survived the severe frost disasters of 1892 and 1956 without significant damage, further demonstrating the superiority of its terroir. While most wineries in the Saint-Emilion region primarily use Merlot in their winemaking, Château Ausone favours Cabernet Franc. The vineyard primarily cultivates Cabernet Franc, supplemented by a portion of Merlot and a small amount of Cabernet Sauvignon, which is exclusively used for the production of the second label wine, Chapelle d’Ausone. The average age of the vines is 52 years, with the oldest vines planted in the early 20th century, reaching over a century in age. The planting density ranges from 6,500 to 12,000 vines per hectare. Additionally, the soil in the vineyard is primarily limestone clay and limestone, which is the primary reason for the mineral-rich flavour of Chateau Ausone's red wine. The estate adheres to organic and biodynamic principles in both vineyard management and winemaking, striving to ensure that the wines fully express the terroir's unique characteristics. Within the vineyard, staff not only carefully tend to the grapevines but also cultivate various fruit trees and aromatic plants, allowing insects, birds, and even bats to roam freely. This approach aims to fully activate the soil's vitality and promote the harmonious development of the entire vineyard ecosystem. During harvest, grapes undergo rigorous selection, with only healthy grapes that have reached optimal ripeness being used for winemaking.

During the winemaking process, the processed grapes first undergo cold maceration to extract pigments and flavour compounds from the grape skins. Alcoholic fermentation then takes place in traditional large oak barrels, followed by malolactic fermentation in small French oak barrels.
