From the first sniff, I liked the complexity and ambition of this white wine, with its flinty and pure Sauvignon citrus flesh flavors. For the best white wines, there is always a texture and a feeling, not just a taste, that only a good wine can give. It presents sweet, rich, rounded flavors, but still with a sense of minerality.
With these high scores (90-94 points) from several international wine critics, I believe we can all appreciate the quality of the 2015 Château Olivier Blanc and the assurance of Graves' elite Pessac-Léognan white wine, which was harvested by hand, using left-hand pruning. After harvesting the grapes by hand, a general selection is carried out in the vineyard, followed by a second selection in the cellar. For the white wine, the grapes are macerated on their skins and then fermented in oak barrels (1/3 new), but aged for 12 months. In addition to the careful selection of the grapes, the quality of Pessac-Léognan white wines is far superior to that of ordinary Bordeaux wines, mainly due to the fact that malolactic fermentation is mostly absent during the winemaking process, in order to retain sufficient acidity to allow the wine to be consumed at a young age, with its fresh fruits and floral aromas, or to be aged for many years, to experience the complexity of flavors as they change over the years. The flavors and layers of the wine can also be tasted after years of aging.

Located in the Graves region of Bordeaux, France, just 11 kilometers from the famous city of Bordeaux, Château Olivier is a very old winery whose château is considered a monument to the history of the region, with traces of early medieval times still remaining. The château has belonged to a Bordeaux family, the Bethmanns, since the 19th century, when Alexandre de Bethmann was elected mayor of Bordeaux in 1867. Since then, his family has purchased Château Olivier, which is still run by descendants of the family, and the Bethmann family has now handed over the leadership of the winery to Mr. Laurent Lebrun (agronomist and oenologist). In 1953, Château Olivier's red and white wines were classified as 🏵.

Graves Grading System.:
In Bordeaux, the Graves classification system is divided into three classes, of which only 16 are classified as Graves Grand Cru Classé, and all of them are from the elite classification in the north of Graves - Appellation Pessac-Léognan, Château Olivier. A few châteaux are classified as Graves Grand Cru Classé for both red and white wines, with Merlot, Cabernet Sauvignon and Cabernet Franc as the grapes of choice for red wines, and Sémillon and Sauvignon for white wines, The Graves classification system also has Appellation Graves Controlée - for red wines and unsweetened white wines that meet local standards, and Appellation Graves Supérieures - for sweet white wines.
