Why do some Port bottles bear white oil marks on their front?

Most aged Port bottles display white oil marks known as Splash Marks on their front.

These serve as winery markers during cellar storage, indicating the bottle's upright orientation and the location where sediment accumulates (opposite the Splash Mark). 

Consequently, it is recommended that connoisseurs store Port bottles in their wine cabinets with both the label and the white splash mark facing upwards. Additionally, standing the bottle upright for 1-2 days prior to consumption allows the sediment to settle fully at the base.



Château Yaldara, once the core asset of Australia's second-largest listed company, Australian Vintage Limited (AVL), is renowned for its premium port wines and ranks among Australia's premier wineries. In 2014, Australia's 1847 Winery formally acquired Château Yaldara. a development that caused quite a stir locally. The formidable 1847 Winery, founded in 1847 by Johann Gramp Curnow – great-grandfather of its original owner John Curnow – stands as the region's first commercial winery still in operation today, currently owning seven freehold vineyards. The renowned Chateau Yaldara, like a grafted rootstock, continues to enrich 1847 with its enduring vitality.


Chateau Yaldara traces its origins to 1941, when a young German-born man named Hermann Thumm arrived in Australia with dreams of becoming an accomplished winemaker. He embarked on an ambitious venture in the Murray River wine region, conducting large-scale experiments in Champagne-style winemaking. In his autobiography, The Road to Yaldara, he reflected: ‘For many years, I had been planning and hoping to carve out a place for myself within South Australia's wine industry. To this end, I prepared in every conceivable way for this moment to arrive.’

 Fortune favours the diligent. Four years later, at the age of 33, a pivotal turning point quietly emerged. During a journey through South Australia's Barossa Valley, passing the banks of the North Para River, Hermann Thumm unexpectedly encountered the utopian land of his dreams. After considerable effort, Mr Hermann Thumm successfully acquired the property the following year. He began building his Yaldara wine empire with his own hands, launching a legendary wine venture that would leave an indelible mark on the history of viticulture and winemaking in the Barossa Valley.



The history of the Yaldara estate dates back to 1854, when a water-powered flour mill was first established here. It was soon converted into a flax processing plant, before later serving as a wine production facility. In the early years of his stewardship of the vineyard, no one came to purchase the grapes. Witnessing the grape growers' anxiety as the fruit of years of labour found no market, Hermann Thumm boldly decided to buy the entire harvest from all the growers. This act earned him widespread acclaim. The following year, when the grape harvest was poor, the wine stored in his cellars sold exceptionally well. Thus, Mr Hermann Thumm welcomed his first successful vintage. With a kind heart, helping others proved to be helping himself.

It is said that Hermann Thumm's love for his wife was as profound as port wine's affinity for oak barrels. The romantic Hermann Thumm fell instantly in love with the daughter of the local Hebart family. and the young, capable man won the beautiful Miss Hebart's heart through his devotion and dedication to the wine industry. He named the estate ‘Yaldara,’ meaning ‘shimmering and captivating,’ a fitting metaphor for the virtuous and intelligent Miss Hebart.


Mr Hermann Thumm cherished his wife throughout his life, profoundly grateful for her scholarly upbringing which nurtured their two sons to health and fostered a harmonious family bond. When stored in small oak casks, handcrafted by Australian master coopers from aged timber, Port wine continues to evolve with each passing year, revealing fresh vitality. Thus, each daily tasting offers a unique expression of its character.

Currently, 1847 Port ranks among Australia's top three in stock volume, with vintages spanning over 60 years from as early as 1952.
