Aligote is cultivated on approximately 1,946 acres in France, almost entirely in Burgundy, with smaller plantings in Chablis. The variety is typically planted on the highest slopes or at the foot of hills, with the best performance occurring in the Bourgogne Aligote and Côte Chalonnaise appellations. The name "Aligote" aligns with "Gott," the old name for white Gouves in the Côte de Beaune, leading to the belief that Aligote originated in northeastern France, most likely in Burgundy.
Aligote is an early-ripening variety and more frost-resistant than Chardonnay, meaning it can survive in these cooler climates for a while. Just south of Burgundy, small amounts of Aligote white wine are found in the Rhône Valley. Wines produced from Aligote are typically dry, with floral and herbal aromas. The variety's high acidity allows it to be blended with other grapes, adding structure, rounded acidity, and fragrant aromas.
