This wine is pale golden in color with an exuberant aroma of grapefruit, green apple, gooseberry, white flowers, and delicate hints of mango and white peach. On the palate, it is crisp and refreshing, with a rich body, precise acidity, and classic Loire Valley minerality perfectly balanced.

Winery

Domaine Sautereau is a historic family-owned winery in the Sancerre appellation of the Loire Valley in France. The winery is located in the village of Crézancy-en-Sancerre, about 7 kilometers south of the town of Sancerre.

The winery's winemaking history dates back to 1683, with techniques passed down through generations. It is currently managed by David Sautereau, the tenth generation of the family. David studied winemaking in Burgundy and Champagne, and interned in Switzerland, California, and Australia, bringing a perspective that blends traditional and modern techniques to the winery. He produced the first vintage of Sancerre wine in 1997, and the winery's vineyards now cover approximately 18 to 22 hectares.

Region

The winery's vineyards are primarily located in the villages of Crézancy-en-Sancerre, Bué, and Sancerre, and the diverse terroir contributes to the rich character of its wines. The three most classic soil types in the region are all present in the winery's vineyards:

Caillottes: Limestone covered with small pebbles, providing excellent drainage and imparting elegance and refinement to the wines.

Kimmeridgian Marnes: Clay limestone rich in marine fossils, contributing roundness, fullness, and complexity to the wines.

Terres Blanches: A white clay rich in marine shell fossils, giving the wines powerful aromas, freshness, and a long finish.

Notably, David Sautereau has fully transitioned to organic farming and is about to receive official certification to ensure the ecological health of the vineyards and the quality of the fruit.

Winemaking

Domaine Sautereau's winemaking philosophy is to respect tradition while using modern technology to precisely express the terroir.

**Cool Fermentation:** To preserve the purest fruit aromas and varietal characteristics of the Sauvignon Blanc grapes, the winery employs a low-temperature fermentation process.

**Lees Aging:** After fermentation, the wine is left to rest on lees (dead yeast cells) for several months. This process adds complexity, roundness, and a hint of toasty aromas to the wine. For example, their classic Sancerre white wine undergoes three months of lees aging after fermentation and is bottled six months after harvest to maintain its freshness.

**Stainless Steel Tank Aging:** The winery's wines are primarily aged and stored in stainless steel tanks. These inert containers maximize the preservation of fruit flavors and pure minerality.
