Palate: The bouquet reveals intense notes of lemon, green apple and pear. Smooth on the palate, it exhibits distinctive minerality and a creamy, rounded texture with a hint of saltiness. Well-balanced acidity makes it an excellent accompaniment to food. Compared to standard Chablis, this exhibits a more elegant style with a finer texture. As a Premier Cru, it occupies a higher tier within the Chablis classification system, with production accounting for just 15% of the region's annual output, making it particularly rare. This bottle offers exceptional value for money and is well worth trying.

The Ellevin family has been producing wine since establishing their estate in 1975. Spanning 16 hectares, the estate adheres to traditional cultivation and winemaking methods, to craft wines of the highest calibre. Vaucoupin is a Premier Cru vineyard within Chablis. Its geographical advantages and regulatory constraints elevate the quality of its wines beyond standard Chablis offerings. The distinctive soil of Vaucoupin imparts a unique character, most notably its celebrated mineral notes, creating an unforgettable experience. Furthermore, the region's cool climate ensures grapes develop ample acidity, which, combined with the mineral notes, results in truly classic wines.

Burgundy's white wines are arguably the most renowned in all of France. Chablis is a village within the Burgundy region, situated in its northernmost part. It experiences a cool continental climate and is geographically closer to the Champagne region and the French capital Paris than to other Burgundy appellations (Côte-d'Or), which enjoy a milder continental climate. Only white Chardonnay grapes are permitted here, as this land was once submerged beneath the sea, rich in fossils of the small oyster species Exogyra virgula. These oyster shells impart an exceptionally high limestone content to the soil, resulting in a pronounced mineral character in the wine. It may taste reminiscent of slightly salty mineral water, or carry an aroma akin to flint from a lighter. This distinctive mineral note, coupled with pronounced acidity, defines the signature profile of Chablis. The Chablis appellation's white wine classification comprises four tiers: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Compared to Chardonnays from other Burgundy regions (which often exhibit more oak 🪵 and creaminess), Chablis emphasises freshness, uses oak barrels 🪵 less frequently, and undergoes less malolactic fermentation (MLF).
