In 2008, Baron Lafite de Rothschild Wine Company conducted research in multiple production areas in China and finally decided to locate in Qiushan Valley. The red wine of Domaine de Long Dai is brewed according to the traditional Bordeaux brewing method. Alcoholic fermentation is carried out in stainless steel tanks. According to the different characteristics of grape varieties, the winery tailors the process for each fermentation tank. The fermentation process lasts 20 to 26 days to ensure that tannins and colors are extracted layer by layer. In order to achieve a balance between richness and freshness, the brewing team moderately shortened the macerating time of Marselan. After the wine undergoes malolactic fermentation, the team selects the best quality parts for blending. The blended wine then enters the 18-month oak barrel aging period. The oak barrels used are all from Lafite. The Bordeaux cooperage of Baron de Rothschild.
