Brewing steps
1. Selection of materials: The raw materials used for making whiskey are different. Jack Daniel’s uses high-quality corn, rye and malt as the materials for making whiskey. More importantly, in this process, it does not use ordinary water for processing, but uses unique cave hot spring water produced in the Tennessee region. This hot spring water remains at 56 degrees Fahrenheit all year round and contains no iron, but is rich in lime. The hot spring water flows at a rate of 800 gallons per minute year-round.
2. Germination (Maltings): Soak the wheat (Malt) after removing impurities in hot water to germinate. This process takes one to two weeks. After it is completed, dry it and wait for it to cool before storing it for about In one month, germination comes to an end.
3. Milling and Mashing: Put the malted wheat stored for one month into a special stainless steel tank, mash it and cook it into juice, which takes 8 to 12 hours. Usually in the grinding process, the control of temperature and time is a very important link. Too high temperature or too long time will damage the quality of wort.
4. Fermenting: The cooled wort is mixed with yeast for fermentation. Yeast converts the sugar in the wort into alcohol. Therefore, after the fermentation process is completed, a liquid with an alcohol concentration of 5% to 6% will be produced, which is commonly known as "brewer's beer".
5. Distillery: The function of distillation is to concentrate. The low-alcohol "Beer" formed after fermentation needs to be distilled to form whiskey. The alcohol concentration of the whiskey produced at this time is approximately between 60% and 70%.
6. Mellowing: This is an important link that distinguishes Jack Daniel's from other whiskeys. Instead of being barreled immediately after distillation, the new spirit is filtered drop-by-drop through ten inches of sugar maple charcoal to create a smooth mouthfeel.
7. Aging: The new wine after distillation must go through the aging process. Through aging in oak barrels, it absorbs the natural aroma of plants and gradually reduces the strong stimulation of high concentration of alcohol, while producing a beautiful amber color. Different regions have different aging time requirements. For example, Scotland stipulates that whiskey must be aged in wooden barrels for at least three years before it can be put on the market, and the aging time must be clearly marked on the label of the wine. There is indeed no fixed standard for the aging time of Jack Daniel's. Instead, tasters judge whether the new wine is qualified by comparing it with the old wine. Therefore, Jack Daniel's standards are also the customer's standards, which is to take a bite. Although manual control of wine quality is more expensive in terms of cost, it ensures Jack Daniel's long-lasting quality and pure taste.
