Kameizumi Shuz was founded in 1897 in Tosa City, Kochi Prefecture, Shikoku Island. The name Kameizumi translates to "Tortoise Spring," named after a legendary well next to the brewery that has allegedly never run dry for ten thousand years. The brewery uses this exceptionally crisp, soft spring water as its foundation, giving their products a signature rounded, naturally sweet, and gentle character.
Kameizumi is famous among sake enthusiasts for its bold and precise use of Kochi's local yeasts (such as the highly aromatic CEL-19). Consistently ranked among the top boutique breweries in Japan, they bring the same level of artisan dedication from their award-winning sakes into their fruit and spice liqueurs.
Brewing
Instead of using cheap neutral spirits, Kameizumi uses its own premium Junmai sake as the base. This imparts a rich umami depth and a silky texture that commercial liqueurs simply cannot replicate.
Kochi is Japan's top ginger producer. The brewery selects Kogane (Golden) Ginger, celebrated for its intense aroma. Through careful extraction, the brewers retain its comforting warmth while smoothing out any harsh, aggressive burn.
To balance the warmth of the ginger, fresh juice from local Konatsu citrus (a unique Japanese summer mandarin) is blended in. It introduces a bright, zesty acidity that lifts the entire flavor profile.
Finally, a touch of pure, rich honey is added to seamlessly bind the ginger's spice and the citrus's tartness into a velvety liquid gold.
Tasting Note
It pours a beautiful, luminous pale amber-gold. When gently shaken, fine particles of real ginger and fruit pulp dance in the glass, reflecting light beautifully and highlighting its all-natural craft origins.
Upon opening, you are greeted by a burst of vibrant citrus freshness from the Konatsu mandarin. This is quickly followed by the comforting, earthy aroma of freshly grated young ginger, rounded out by a subtle, soothing whisper of sweet honey.
An absolute delight on the tongue. The entry is bright and sweet-tart, driven by the citrus and honey. Mid-palate, the gentle, radiant warmth of the ginger unfolds. There is zero sharp burn; instead, it offers a velvety, cozy spice. Thanks to the Junmai sake base, the liqueur has an incredibly satisfying weight and complexity without ever feeling cloying.
Clean and incredibly smooth. The sweetness dissipates gracefully, leaving behind a lingering, therapeutic warmth that gently glows at the back of the throat. It leaves the palate refreshed and ready for the next sip.
