Rating/Tasting Note: This Chardonnay was fermented and aged in French oak barrels for approximately 10 months, with about 16% new oak. It underwent MLF (Milk, Fluid, and Lacquer) and regular stirring, resulting in a wine with buttery, vanilla, nutty, and smooth textures. However, due to the cool climate of Marlborough, the acidity remains pronounced, preventing it from being as heavy as some other Chardonnays.

【Winery】

The winery was founded by Japanese businessman Shigehisa Kimura and his wife, Mieko Kimura. Shige previously worked as a sommelier in a Tokyo hotel, where he was responsible for opening, discussing, and pairing wines for guests. Later, he visited Champagne and Bordeaux, where he truly experienced the atmosphere of vineyards and cellars for the first time. He began to realize that wine is more than just a bottle on the table; it represents the land, the craftsmanship, and the choices of the people who create it. So, he and his wife left Japan for New Zealand to learn grape growing and winemaking, eventually establishing their own brand in Marlborough.

【Region】

The grapes are grown in the heart of Marlborough – the Wairau Valley, because this region has the greatest temperature difference between day and night, resulting in wines with rich layers of complexity.

【Winemaking】

Fermentation is done using two different yeasts separately, resulting in a complex and multifaceted flavor profile. It is then aged in oak barrels for three months, adding further richness to the palate. It boasts a delightful citrus aroma.
