Kitajima Brewery, located in Shiga Prefecture, boasts over 200 years of history and is home to two well-known sake brands, "Miyoei" and "Kitajima." The brewery aims to create wines that perfectly complement various cuisines.

About the brewing process

This plum wine, infused with sea salt, boasts a unique and innovative flavor, a special combination of sea salt and plum wine. The sea salt used by the brewery is "Sea Essence," sourced from Izu Oshima, a natural sea salt produced using traditional salt-making methods utilizing abundant seawater, sunlight, wind, and fire.

The addition of sea salt brings out the natural sweetness and tartness of the plum and the rice aroma of the sake, adding a distinctive flavor profile!
