Once barreled, the maturing spirit is left to rest in the same barrels for a certain number of years, depending on the desired flavor profile of the particular Macallan. The Macallan is one of Scotland's most famous distilleries, producing one of the best-selling single malt whiskeys in the world. The winery is located on the Easter Elchies estate of 158 hectares (390 acres) of farmland, on the banks of the River Spey in the heart of Speyside. The estate includes 37 hectares (90 acres) of barley grown for whiskey production.
In June 2018, a new brewery building with a visitor center opened on the property. The ultra-modern facility has been cut into the hillside and features spectacular undulating, grass-covered timber roofs. There are now 12 wash stills, plus 24 stills. Production will increase by one-third. There were 14 stills in total and are said to be the smallest stills in Speyside, although each still has a capacity of 3900 liters.
The Macallan family style has traditionally leaned towards rich, fruity whiskies, which the late whiskey writer Michael Jackson described as "Christmas cake in a glass". This is a result of using sherry casks exclusively to age the spirit, but since 2004 bourbon casks are also used. The Macallan produces a wide range of whiskeys across four main ranges. The Sherry Oak range includes four expressions ranging in age from 12 to 30 years old. The “Premium Oak” range – aged primarily in bourbon barrels – offers eight different ages ranging from 10 to 30 years. These tend to be lighter than traditional Macallan products.
The distillery also has a variety of premium collections, examples of which are among the most expensive whiskeys ever produced. A 1926 Macallan sold at auction in 2007 for $54,000, while a 64-year-old one-off Lalique bottle sold for $460,000 at a 2010 New York auction. Priced to sell. The most expensive whiskey ever sold was a Macallan M bottle that fetched $628,000 at auction in 2014 in Hong Kong.
