The Macallan is one of Scotland's most famous distilleries, producing one of the best-selling single malt whiskeys in the world. The distillery is on the banks of the River Spey in the heart of Speyside, on the Easter Elchies estate, which covers 158 hectares (390 acres) of farmland. The estate includes 37 hectares (90 acres) of barley for the production of whiskey.
In June 2018, the property opened a new winery building with a visitor center. The ultra-modern facility has been cut into the hillside and features a spectacular undulating, grass-covered timber roof. There are now 12 washing stills, plus 24 stills. Production will increase by a third. With a total of 14 stills, it is said to be the smallest still in Speyside, despite having a capacity of 3900 liters each.
The Macallan Family Style has traditionally leaned towards a full-bodied, fruity whiskey, described by the late whiskey writer Michael Jackson as "Christmas cake in a glass". This is the result of the exclusive use of sherry casks to age the spirits, but since 2004 bourbon casks have also been used. The Macallan produces a wide range of whiskeys, spanning four main lines. The Sherry Oak range includes four expressions ranging in age from 12 to 30 years. The "Premium Oak" range—aged primarily in bourbon barrels—offers eight different vintages aged between 10 and 30 years. These tend to be lighter than traditional Macallan products.
The distillery also has a variety of premium collections, an example of which is one of the most expensive whiskeys ever made. A 1926 Macallan sold for $54,000 at auction in 2007, while a 64-year-old one-off Lalique bottle fetched $460,000 at a 2010 New York auction. Priced to sell.
