The winery is committed to organic and biodynamic viticulture and employs minimal-intervention winemaking, avoiding filtration and fining to reveal the authentic flavors of Burgundy wines.
Maturation is one year in oak barrels, followed by a minimum of six months in stainless steel tanks.

Pierre-Vincent Girardin's father, Vincent Girardin, founded the company in the 1990s, once a prominent Burgundy wine merchant (now an independent winery). In 2017, Pierre-Vincent, less than 20 years old, decided to strike out on his own, establishing his own wine brand. He has since been hailed as a rising star in Burgundy. His vision differs from his father's, and he hopes his wines reflect this. To minimize the impact of oak, he spared no expense, purchasing the latest presses, fermentation tanks, and larger (456L) barrels from Tonnellerie Francois Freres. All of this equipment is housed in the modern winery in Meursault.
In addition to the original 4.5 hectares, the winery also partners with certified organic growers. Vineyard management also adheres to organic practices, with a unique feature of not thinning leaves. Harvesting is manual, followed by further sorting in the workshop. Most grapes are fully destemmed, but some red wines use 10-30% whole bunches for gentle pressing (up to three hours) and maceration, followed by fermentation with native yeasts. The resulting red wines are renowned for their elegant flavors, rich fruit flavors, and smooth, rounded tannins. Guide Bettane et Desseauve, a leading French wine publication, awarded it a high four-star rating in 2021, and has been praised by numerous reviewers and organizations, including Allen Meadows, Winehog, and William Kelley.

Meursault is located in the Côte de Beaune appellation (Côte-d'Or). There are 19 Premier Crus Climats. On labels, the appellations Meursault and Meursault Premier Cru can be followed by the name of the vineyard.
The Chardonnay vines on this plot at Les Meix Chavaux were carefully planted in 1970, facing northeast. Ideally situated near the Combes d'Auxey-Duresses, the plot seamlessly extends from the site, ensuring a cool microclimate. This geographical placement has proven particularly beneficial in warm years, such as the renowned 2018, allowing the wines to retain remarkable freshness. Consequently, Meursault wines exude a lively aroma.
