Togouchi 15 Years is temporarily the oldest whisky of Togouchi, is a blend of grain (wheat & corn) and malt whisky aged for 15 years. This whisky aged and blended in Japan in bourbon barrels, will seduce you with its notes of chocolate and softly smoky.

Togouchi's whiskies are uniquely rooted between the land and the sea. The liquids are distilled near the Seto Inland Sea, while the casks are stored in cellars at the foot of the Osorakan mountain, in the small town of Akiota-Togouchi. Crafted and closely monitored by a team of local artisans at Sakurao Distillery, these Japanese whiskies capture several decades of expertise and reflect the passion at the heart of these iconic bottles.

The Sakurao Distillery was founded in 2017, on the shores of the Seto Inland Sea in the city of Hatsukaichi. If the name seems familiar, it is probably because the city is also home to one of Japan’s most beautiful treasures, the Itsukushima Shrine, a UNESCO World Heritage Site. It is an inspirational setting for the craftsmen who work at the distillery, all of whom hail from the Hiroshima region. Sakurao is now part of a very limited group of japanese distilleries able to produce 100% japanese whiskies as all the malt and grain whiskies used in their blends, is distilled through its stills.

Sakurao Distillery: where tradition meets modernity

The art of distilling is thoughtfully cultivated at Sakurao Distillery.

For malt distillation, the swann neck of the pot still is purposedly modified to retain more esthers and design more complex whiskies. A hybrid still is then used for the second distillation, which results in a higher alcohol volume than usual and fruitier whiskies.

For grain distillation, made out or barley, the traditionnal still that used to be operated for shochu production is used. A second distillation is then operated in a still designed by Sakurao, using the traditional iron still topped with a distillation column. This process leads to a light and floral whisky profile.

A unique aging process in an underground cellar

a recognized expert in underground aging, sends its precious liquids to a cellar in the heart of Hiroshima. In fact, the cellars are buried under Osorakan mountain, in the small town of Akiota-Togouchi, several hundreds of yards under the ground, to take advantage of the climate and humidity conditions which are perfect for aging Togouchi whiskies.

The surrounding mountains are particularly generous, as the water used to make these Japanese whiskies is drawn from the Oze river. It is like a sanctuary, where the whiskies enjoy unmatched aging conditions. This unusual setting makes it possible to control the environmental factors that are decisive in obtaining the desired aromatic profile. This slows down the extraction of aromas from the barrel, and explains the elegant profile of the Togouchi range as well as its light color.

MASTER DISTILLER Taihei YAMAMOTO

Pillar of the Chugoku Jozo house, which he joined in 1998, M. Taihei Yamamoto has been part of the Sakurao adventure since 2017 After achieving brilliant studies in chemistry and microbiology, the distillery's Master Distiller visited and studied distilleries around the world to perfect his knowledge in the production of alcoholic beverages. A luck for the Chugoku Jozo house that never let him go ever since !
