The 2000 Latour is very deep in color. The nose is backward and demands coaxing from the glass, eventually revealing intense black fruit, cedar, graphite and very subtle Japanese nori aromas. The palate is medium-bodied with an arching structure that grips the mouth. The tannins are a little bolder than the 2001. This unfolds swirl by swirl, with hints of licorice emerging with time, and fanning out audaciously on the finish.

Chateau Latour拉圖酒莊位於Pauillac波雅克產區，是五大1855一級莊之一。

酒莊歷史悠久，追溯到14世紀。1331年，在英法百年戰爭中，批准在吉隆特河岸邊建造防禦塔以保護河口免受攻擊。儘管一個世紀後法國國王將其完全摧毀，但後來 Chateau Latour 還是以此曾經位於該莊園東南側的防禦塔命名。莊園現有的鴿舍，常被誤認為是原始的防禦塔，其實它是用已夷為平地的防禦塔中的石頭建造。

一直到16世紀末期，Chateau Latour都是由兩位領主共同持有。當時，Chateau Latour 將土地租給農民們耕種，農民需要向兩個主人交稅。到17世紀末期，酒莊在Mullet家族的手中被打理得井井有條。雖然雇農租賃制逐漸的被直接經營所取代，但是葡萄的種植面積並沒有因此而擴大。而後，透過姻親和繼承，酒莊傳給有葡萄園王子稱號的 Marquis Nicolas-Alexandre de Segur(同時擁有Lafite Rothschild)。在18世紀和19世紀，遺產繼承分家和法國大革命的爆發使酒莊所有權分散在家庭成員和外部政黨，儘管存在著這種不穩定，但對葡萄酒的生產品質幾乎沒有影響。1855年分級制度中被評比為一級酒莊(Premier Grand Cru Classe)，與Chateau Lafite Rothschild拉菲古堡、Chateau Margaux瑪歌酒莊和Chateau Haut-Brion紅顏容齊名。

拉圖酒莊選用的橡木桶來自於法國中部的森林，正牌酒每年都會使用新橡木桶進行熟化。在第一年的熟化過程中，釀酒師會使用密封性較弱的玻璃塞，讓葡萄酒與空氣進行一定程度的接觸，並每兩周進行一次添桶。第二年夏天來臨前，葡萄酒會被轉移至另一個酒窖，在恒定的溫度下、於密封的桶內進行10-13個月的新一輪熟化。此次熟化完成後，釀酒師使用蛋清對葡萄酒進行澄清，並在45天後進行倒罐，以徹底清除沉澱，之後進行最後一次品鑒，決定葡萄酒的裝瓶時間。2012年，拉圖決定不再銷售期酒，所以酒莊延長了葡萄酒的瓶陳時間。一般情況下，拉圖的正牌酒、副牌酒以及三牌酒在上市前需分別在酒窖裏陳釀8-10年、6-8年以及4-6年。
