Blanc de Blancs is translated as "white of whites" and refers to wines made from 100% white grapes, the most common of which is 100% Chardonnay. Due to its unique chalky soil composition, Chardonnay is grown in southern Champagne (such as the Côte Blanche). ) grows luxuriantly. Blanc de Blancs is a refreshing, light-bodied wine with citrus aromas and a delicate mineral finish.

Chardonnay Outstanding Region – Cote des Blancs

Although Chardonnay can be found throughout the Champagne region, among the many Champagne sub-regions, the Cote des Blancs (White Côte) is the most famous. The Cote des Blancs is located south of Épernay and extends from northeast to southwest, perpendicular to the Marne Valley. Just a few kilometers from Epernay, its slopes and mounds surround the Plateau of Brie in the Champagne region for 10 to 15 kilometers. The famous champagne houses Moet Chandon, Dom Perignon and Salon are all located in this production area.

The production area has unique chalk soil, which has good drainage capabilities. The east-facing slopes are fully exposed to sunlight, providing an ideal growing environment for Chardonnay. Cote des Blancs has a total of 6 Grand Crus, including Avize, Chouilly, Cramant, Le Mensil-sur-Oger, Oger and Oiry. Among them, Jacques Selosse, who started the RM (small farmer champagne) trend, is located in the Avize district.

Food pairing with Blanc de Blancs
