WAKAZE

WAKAZE is a new brewery established in 2016. The name comes from the meaning of "Japanese wind" and "Ruoshi (meaning young Tibetan people)", with the vision of "making Japanese sake a mainstream wine in the world." From a young perspective, we connect the three concepts of "the balance of intuition and skills", "the coexistence of tradition and innovation", and "respect for history". We set up breweries in Japan and France respectively, using 100% local raw materials for brewing, making full use of the terroir characteristics. , following the laws of nature and constantly launching innovative wines, the refreshing brewing style has attracted much attention, and has attracted drinkers from all over the world. Through the simplicity and power of "NO RULES, JUST SAKE", we strive to break the old framework and introduce the pure charm of Japanese sake to the world.

Mr. Takuma Inagawa, the founder and CEO of WAKAZE, graduated from Keio University and Ecole Centrale in Paris, majoring in science and engineering. He then started his career at the Boston Consulting Group and finally founded Wakaze in Japan in 2016.

 

Mr. Shoya Imai of WAKAZE Shuzo Toshi and Mr. Sato of Shinsei also graduated from the prestigious public university - the University of Tokyo, so they were able to study at Shinsei Shuzo. In addition, he received training from Mr. Yasuichi Moritani, the sake master of Asamai Shuzo in Akita Prefecture, and practiced at Suda Shuzo in Toyama Prefecture, Abe Shuzo in Niigata Prefecture, and Shoshuzo in Gunma Prefecture, absorbing the brewing techniques of sake breweries from all over Japan. The experience, knowledge and skills are extremely rich.

Currently, there are even more French people working in the winemaking industry at WAKAZE. The new thinking of the constantly learning and experienced Toshi, the Zang people from France, and other younger generation Zang people have brought a new atmosphere to the sake industry! !

HEROES Collection

The Classic (Japanese/French version sake) - Shuzo’s flagship junmai sake, available in Japanese and French versions.

 


YUZU sake (yuzu sake) – Adding citrus fruits (yuzu, lemon) to the sake base, it has a rich citrus fruit aroma, with sweetness and the aftertaste of citrus peel.

 


NIGORI sake - Sake without complete filtration. The liquor contains rice sediment, with rich rice aroma and lactic acid flavor, and medium sweetness.

BARREL Collection

BARREL sake (Red wine) – Aged in red wine oak barrels from Domaine Jacques Prieur, a famous Burgundy winery. It has an unrestrained fruit aroma, vanilla flavor, smooth taste, and a little sweetness at the end.

 


BARREL sake (Whisky) - Aged in whiskey oak barrels, it has a nutty, dried fruit aroma. The finish is full of woody tones.

 


BARREL sake (Brandy) - Aged in brandy oak barrels for 2 months. It has the aroma of honey, caramel and dried fruits, is extremely sweet, and has a rich body, belonging to the ancient wine style.
