22 Months of Long-Term Aging on the Lees: Classic Toasty & Buttery Tones

Tasting Report: Bright amber-gold color, with aromas of ripe apple, white pear, and kiwi. The palate reveals distinct creamy, breadcrumb-like notes, with remarkable freshness and a long, meses-sur-lie complexity. Crisp, elegant acidity and lively structure complement rounded mineral and honey notes.

Cava is a major source of Spanish flavor, produced using traditional methods with a secondary fermentation in the bottle. The production of Fanatic Cava Brut Imperial Reserva is located in the Penedès region, at the Saint Sarní d'Anoi site, a production center for Spain's core national wines. Wines are produced at altitudes between 500 and 800 meters in the nearby Mediterranean region, regulating temperature and growing varieties.
Cofama Vins i Caves was founded in 2002 with the goal of representing a wide range of wineries internationally, leveraging its experience in the wine sector and international business. In 2006, the company launched a new strategy based on operating its own brands and has continuously expanded its winery portfolio. The company has registered numerous brands and developed several independent projects, which it still manages today. In 2016, Cofama Vins i Caves acquired its own bottling line and began operating wineries in various Catalan appellations. That same year, the company began producing organic Cava and natural wines. The company's success lies in its ability to accurately identify market needs and adapt its product range to current trends. Today, Cofama wines are successfully sold in more than 35 countries around the world.
