The aroma is bursting with notes of cantaloupe, ripe pear, and a hint of fresh pineapple. The first sip is rich and sweet, followed by a refreshing burst of effervescence. After the fruity sweetness, the savory flavor emerges, with a crisp acidity quickly complementing the sweetness, leaving you wanting more. The 50% rice polishing ratio ensures a pure balance in all aspects: texture, savory flavor, body, and silkiness. 【Sake Brewery】
Founded in 1883 in Sanbu City, Chiba Prefecture, Kankiku Brewery is located in the Kujukuri Hama region, just steps from the Pacific Ocean. The brewery is dedicated to achieving the ultimate in "freshness," with the vast majority of its brews being shipped as "unfiltered raw sake," showcasing an amazingly juicy fruit aroma accompanied by a light, subtle carbonation. Among its offerings, the "Ocean 99" and "Discovery" series, reflecting seasonal aesthetics, perfectly blend the seaside terroir of Kujukuri Hama with modern design, making Kankiku highly sought after by contemporary sake enthusiasts.
【Sake Making】
"Kanjuku" is a renowned sake brand that has seen a surge in popularity in Chiba Prefecture in recent years. Its "Occasional" series is a limited-edition line brewed only once a year. Because all its sake is "unfiltered raw sake," it boasts a prominent flavor and rich complexity, making it a must-try for many sake enthusiasts every year.
The unique charm of the phantom rice "Jugenmu"
It uses "Jugenmu" sake rice, a specialty of Fukuoka Prefecture with limited production.
It is a descendant of "Yamada Nishiki" and "Yume Ichiken," inheriting the rich layers and structure of Yamada Nishiki and the gorgeous flavor of Yume Ichiken.
A small amount of Yamada Nishiki is blended in to make the five flavors even more distinct.
Ultimate Freshness: Bottled "Living" Sake
Origarami (Slightly Smoked Sake Lees) x Unfiltered Nama Sake
> Hazy Moon: A light layer of white sake lees (starch) at the bottom of the bottle; after shaking, it resembles moonlight shrouded in mist. This starch layer brings a lactic acid-like fullness and adds a savory flavor to the sake.
> Unfiltered Nama Sake: Unfiltered, unpasteurized, and undiluted. This means you're drinking the most original, wildest, and freshest flavor from the brewery's fermentation tanks, along with the lively, microbubbly sensation.
