Sauvignon Blanc is produced from only 4 hectares of Les Chandelieres vineyard, where the average age of the grapevines is 30 years. Thanks to the famous Kimmeridgian soil in the vineyard (the soil is similar to the Burgundy Chablis production area), it has a rich minerality. After 22 months of aging on the lees, it has a salty and creamy aroma. Nice acidity brings just the right balance throughout. Fruity flavors of citrus, apple and melon. Faint aroma of lemon peel and orange peel.
【Domaine Philippe Gilbert】
Domaine Philippe Gilbert is named after the owner of the winery. The winery is located in the Menetou-Salon production area of Loire Valley in France and has a history of more than 250 years. The current owner, Philippe Gilbert, is a playwright who returned to Menetou-Salon in 1998 to take over the winery from his father. The family has run the winery since 1768. The owner's grandfather was one of the initiators of the establishment of Menetou-Salon AOC. Philippe Gilbert has long advocated organic farming. When he took over the family business, he and winemaker Jean-Philippe Louis converted 30 hectares of land first to organic farming and later to biodynamic farming.

The winery has 32 hectares of vineyards located in prime locations in Menetou-Salon, Vignoux Parassy and Morogues in the Loire Valley, where Pinot Noir and Sauvignon Blanc are planted. The local soil is a typical mixture of clay and limestone, located on the famous Kimmeridgian basin. The soil is similar to that of Chablis, but has a completely different climate. And at its best, it has a rich mineral flavor and a long-lasting mouthfeel. The appellation itself covers just 470 hectares, a narrow strip of land 5 kilometers wide and 25 kilometers long (from Pigny to Humbligny).
【Menetou-Salon Menetou Salon】
Menetou-Salon is located in the middle of the Loire Valley, 20 kilometers northeast of Bourges. The soil is dominated by Kimmeridgian limestone, which came from the ocean that covered the area 150 million years ago. There are many fossils and white limestone here, which give the region’s wines all their mineral notes. It has a temperate continental climate, and about 20% of the wineries in the entire production area have obtained relevant certifications for organic agriculture. The vine has been exploited since the Middle Ages (11th century) and is famous for its 100% Sauvignon Blanc white wine. In addition, it also produces relatively cheap and high-quality Pinot Noir, mostly in the light style of fresh red fruits.
