Tasting Notes
Upon opening, the sake displays a refreshing and elegant fruity aroma, with bright notes of green apple, white peach, and subtle citrus. As the bubbles release, the base reveals the gentle sweetness characteristic of steamed white rice, along with a very subtle floral aroma. The overall aroma is elegant, perfectly showcasing the original flavor of junmai sake. On the palate, the bubbles are smooth and fine, followed by excellent apple acidity and a natural sweetness. The low alcohol content makes the sake extremely light and smooth. The finish is clean and crisp, leaving a light acidity and a hint of sweetness, without any heaviness in the mouth, making you want to take another sip.
Brewery: Sake Brewery
Yatsushika Brewery, founded in 1864 (Genji 1), is located in Koue-cho, Kusu-gun, Oita Prefecture, and boasts over 160 years of brewing history. Originally named "Aso Brewery," it later adopted "Hachika," a symbol of good fortune, as its brand name. Nestled in the high-altitude mountains of Kyushu, the brewery adheres to traditional brewing methods while boldly breaking through the traditional framework of sake, actively developing innovative products such as low-alcohol and sparkling sake to meet the demands of the modern consumer market.
Region
Oita Prefecture boasts majestic volcanic landscapes, with the Kuju Mountains nurturing high-quality, pristine natural underground spring water. The pure water, with its balanced mineral content, provides an ideal fermentation environment for yeast, resulting in smooth and pure sake.
Kuju Town and other areas, situated at high altitudes, experience significant diurnal temperature variations, which are highly conducive to starch accumulation in rice. Contract-grown rice is plump and white, laying the foundation for the sake's elegant aroma and umami flavor.
Winemaking
Seven years of research and development, employing a secondary fermentation process comparable to top-tier champagne, perfectly locks in the naturally generated carbonated bubbles during fermentation, resulting in dense, fine, and persistent bubbles. With an 8% low alcohol content, it's refreshing and easy to enjoy. This wine has won numerous international awards.
