"Alain Michelot is a large, bluff, friendly individual in his early sixties, his ginger hair and beard now grey, and he works with his daughter Edolie from headquarters off the main road which runs through the middle of Nuits-Saint-Georges. In the last decade things have been tightened up here. No stems; 4 to 5 days maceration; vinifi cation at a maximum temperature of 30C after 24 hours, at the beginning at 33–34C; and 30 percent new oak is the recipe. And the results are usually very good. The house style is for round, fruity wines which avoid the toughness of most Nuits-Saint-Georges. Despite being softer than some, the wines keep well."

有關釀造 Winemaking

自2001年採用Table de Tri(挑選臺)進行嚴格的葡萄篩選﹐葡萄完全去梗﹐果肉加極少的二氧化硫﹐在葡萄皮的原生酵母的作用下，進入緩慢而漫長的發酵過程。必要時，還有進行saignee(放血法)。酒莊的發酵過程相當長，保持28-30°℃的溫度。發酵持續約7-10天﹐並通常不加任何糖分。每一年份的新橡木桶比例不同﹐但Nuits-St-Georges村莊級款式不超越25%，一級園款式不超遇30%﹐以免橡木桶對酒質的影響過大。20個月後，葡萄酒經過輕柔的過濾便可裝瓶。值得一提的是，Alain Michelot酒莊釀酒過程中產生的酒泥非常少，所以避免了裝瓶前的下膠工序。
