100% 手工採摘並在葡萄園中進行嚴格的手工篩選。葡萄運抵釀酒廠後，根據克隆品系、葡萄園、果梗成熟度及風味特徵，決定每一批次的具體處理方式。整串發酵批次，在溫暖條件下進行，最少程度攪動，發酵週期為 14 天。去梗的整果批次則先進行 3 天的冷浸漬，隨後升溫，讓發酵自然啟動。所有酒帽管理均採用重力排汁與回淋方式，以實現溫和萃取，然後進行壓榨。

每個批次的酒液隨後通過重力自流轉移至法國橡木小桶中，進行蘋果酸-乳酸發酵，並保留酒泥進行陳釀。八個月後（10% 新桶，90% 舊桶），各批次在春季進行調配，之後於 12 月不經澄清、不經過濾，採用重力自流裝瓶。

Circle of Fifths 系列酒款僅選用來自各個單一園、且比例相近的葡萄進行混釀——由當年未被選入單一園酒款的批次組成。這些批次將各個獨特園區的優勢彙聚於一身，共同講述一個嶄新的故事。“如果說單一園酒款是每個葡萄園的純淨音符，那麼 Circle of Fifths 就是將這些音符串聯起來的和絃。”— Melanie Chester

香氣中彌漫著野生黑櫻桃、覆盆子、黑莓、藍莓的果香，伴隨八角、甘草、紫羅蘭、木槿花、玫瑰花瓣、櫻花等辛香與花香，並透著一絲皮革、煙草與橄欖醬的鹹鮮氣息。入口酒體中等，單寧緊致而柔順，酸度明亮活潑，果味集中度明顯優於同門的黑皮諾。餘韻中，酸度與單寧的交互帶來一定的複雜度，整體結構堅實。

Gently brooding with aromas of wild black cherries and raspberries along with some whole-bunch–derived fennel seed spice and a touch of violets. Concentrated, with far more stuffing that the Yarra Pinot. Ripe, suave tannins ensure this will be worth cellaring for at least five to eight years.

This delicate and perfumed pinot is a blend of equal parts from five single-vineyard bottlings. Aromas of maraschino cherries, crushed stones, hibiscus, violets and flowers. The palate is mid-weighted with tightly wound tannins and bright acidity, giving notes of blackberry bushes, blueberries, red apple skins and spices.

TThe wine leads with rose petal perfume, cherry blossom, red apple, star anise, pomegranate, licorice and dried sage, with leather, tobacco and tapenade to close. In the mouth, there is a lot going on, yet I find the intersection of acidity and tannin through the finish to skew and occlude the flow of both thought and flavor.

Giant Steps的故事始於1997年，創始人Phil Sexton原是一位來自瑪格麗特河的啤酒釀造先驅，但他對葡萄酒的熱愛驅使他來到雅拉穀，尋找能夠種植出純淨優雅的黑皮諾（Pinot Noir）和夏多內（Chardonnay）的理想之地。

Phil不僅是釀酒師，更是一名狂熱的爵士樂迷。他以爵士樂巨匠John Coltrane的經典專輯《Giant Steps》為酒莊命名，期望酒莊能像這張專輯一樣，在葡萄酒的世界中走出革命性的「巨人腳步」。

2003年，釀酒師Steve Flamsteed加入，與Phil一起開啟了單一園（Single Vineyard）的釀造計畫，專注於表達雅拉穀不同地塊的風土個性。2021年，才華橫溢的Mel Chester接任釀酒與葡萄栽培總監，帶領酒莊邁向新的高峰。注重葡萄精選，致力於使高柏麗酒莊葡萄酒回歸至20世紀初的品質與形象，他為該酒莊的風格與聲譽建立了新的里程碑。
