I051A - IL Poggiolo Le Mie Bollicine Sangiovese Rosato Brut Charmat Sparkling Millesimato 2018
Sangiovese Grosso (Brunello) and Pinot Nero grown in our vineyards in Montalcino. Fermentation: In stainless steel in our cellar in Montalcino. Destemming of the bunches, soft pressing, static decantation of the must, fermentation at a controlled temperature. Aging and resting on the noble lees in steel for 15 days.
Grapes: Sangiovese Grosso (Brunello) and Pinot Nero grown in our vineyards in Montalcino.
Fermentation: In stainless steel in our cellar in Montalcino. Destemming of the bunches, soft pressing, static decantation of the must, fermentation at controlled temperature. Aging and resting on the noble lees in steel for 15 days.
Second fermentation: Italian method in steel autoclaves, long charmat
Refermentation temperature: 15-17'C, cold tartaric stabilization (-4'C) Microfiltration before bottling to separate the yeast cells from the sparkling wine.
Duration of the cycle: about 60 days.

土壤:
在IL Poggiolo酒莊佣有Montalcino 産區最好的土壤類型- Galestro,也是葡萄藤的絕佳土壤。這種土壤比較易碎,碎裂之後(在陽光和雨水的作用下)給土壤帶來的礦物質,這對於葡萄的生長非常有用,這種礦物質可帶給葡萄酒複雜性。Galestro能够保持水份同時排水性好,因此不會遭受乾燥或太熱的天氣影響,適合葡萄品種Sangiovese成熟,這種土壤釀出來的葡萄酒比其他的更為深色以及更為豐富。
海拔高度:
IL Poggiolo酒莊海拔高度約450米,在Montalcino産區最高約560米,這種高度令晝夜差異促使葡萄緩慢成熟,這對於葡萄酒的香氣至關重要。另外使葡萄酒具有較高的酸度,這就是Brunello可以長時間陳存的關鍵因素。除此之外,在異常炎熱的年份,例如2003年和2017年,較高海拔的涼爽溫度使葡萄酒可以保持Fresh的口感。
