Yamada Nishiki is known as the "King of Sake Rice". It is cultivated from "Yamada Sui" and "Sake Ferry". It has all the necessary conditions for brewing high-quality sake. Hyogo, Tokushima and Fukuoka are the most famous. The most abundant rice species in Japan, its fragrant fruit aroma is fascinating!
Yamada Nishiki was first produced at the Hyogo Prefecture Agricultural Experimental Ground. The highest grade is Yamada Nishiki produced in the Special A area of Hyogo Prefecture. It is the favorite rice variety among winemakers and is used in almost 80% of Daiginjo-level wines. Yamada Nishiki’s rice grains have lower protein content than ordinary rice, and are not easily broken during rice polishing. It is very suitable for sake brewing with highly polished rice!
Currently, it is grown from the Tohoku region to Kyushu, but 80% of the planting area is still in Hyogo Prefecture. In particular, the northwest part of Hyogo Prefecture (parts of Miki City and Kato City) is called the "Special A Area" and produces the highest quality "Yamada Nishiki". It can be said to be the king of wine stores, and wine stores all over the country covet it.
Various prefectures are working hard to cultivate new sake rice to catch up with and surpass "Yamada Nishiki". However, the status of "Yamada Nishiki" remains unbreakable, and brewing with the king of sake rice as its pinnacle will continue to develop.
