Nakasaiり is Aburaga Shuzo’s unique brewing method. This is a very luxurious method that only extracts the dripping part without exerting any pressure from the squeezer and can only extract about 15% of the total amount. This is a premium product bottled with rare freshly squeezed sake. It has a unique, rich aroma that is reminiscent of musk and pineapple.
The output of "Zhenzhongcai" is uncertain, and it can be said to be a rare batch that can only be encountered!
During the brewing process of Japanese sake, the sake is taken at different times and divided into three flavors: "arazai", "nakatori" and "responsibility".
Aburaga Shuzo is not named according to conventional classification methods. They collectively refer to the part of the liquor other than the "suga" as "pressed flower" (しぼり花), and the sake produced by Aburaga Shuzo is brewed from the pressed part of the liquor.
Among them, the liquor collected during the free dripping stage of sake without external force is called "Mainakazai" by Yuuchang Shuzo. It has a soft and rich flavor and accounts for about 15% of the total liquor, which is a relatively rare part. Sake brewed using part of the liquor from Manakazai will be stated in the name of the sake. This is a premium product bottled with rare freshly squeezed sake.

Kaze no Mori (Kaze no Mori) is one of the series of a sake brewery in Nara Prefecture called Aburaga Brewery, so the name means something. The two characters "Aburaga" mean that it was engaged in oil-related businesses in ancient times. Sake brewing was started on a trial basis around 1719.
