Chateau Kirwan is located in the Margaux region of Bordeaux. It is a historic Bordeaux estate and was rated as a third growth in the 1855 classification. In 1760, Irish businessman Mark Kirwan married the daughter of John Collingwood, so he inherited Kirin Castle from the Sir and named it after himself. Under Mark's careful management, the vineyard area of the winery grew and prospered. In 1855, the winery was rated as a third growth. Subsequently, Camille Godard, who was the mayor of Bordeaux at the time, was in charge of the Schyler family in 1925, continuing the splendor of the winery. Today, the three children of the eighth generation are in charge of the winery. Under their auspices, the modern building of the winery was completed in 2017. It integrates the functions of brewing workshop and wine cellar. In the brewing workshop, there are many frosted concrete containers, which can meet the brewing requirements of different parks. In the wine cellar, there are orderly oak barrels, where the wine matures.
The vineyard of Château Kirin is located on the highlands of Cantenac, with an area of 37 hectares. Planted with 45% Cabernet Sauvignon, 30% Merlot, 15% Cabernet Franc and 10% Petit Verdot.
Due to the variety of terroirs, the winery has divided it into 35 parks in order to adapt measures to local conditions and fully explore the potential of each piece of land. Among them, the soil in the Cabinet Ouest is laminated clay, and the Merlot produced here is round and plump; the gravel soil in the Mois de juin is distributed, which is conducive to the growth of Cabernet Sauvignon. ) mature and give it velvety tannins; while another Canon garden (Canon) is located at the highest altitude with the same gravel soil, mainly planting Petit Verdot (Petit Verdot).
The complicated work of setting up wires, tying vines, thinning branches and leaves, and picking grapes are all done by hand. After the ripe grapes are picked, they need to be screened layer by layer before they are transported to the winemaking workshop and undergo the same delicate fermentation process. The fermented wine will be aged in French oak barrels with a proportion of about 50% new barrels for about 20 months. During this period, traditional egg white clarification and decanting are required, and finally bottled.
At present, the wines launched by Kirin Castle mainly include the official wine——Chateau Kirwan, Margaux, France , and the secondary wine, Charmes de Kirwan, Margaux, France . Kirin Castle red wine is made from grapes from the best plots of the Kirin Castle vineyard. Fruit picking and two screenings are done by hand. Rich and concentrated on the palate, it perfectly expresses the extraordinary terroir of Kirin Castle. The second brand of Kirin Castle is made from grapes from young plots in the vineyard. Its fruity taste is outstanding and its taste is soft, suitable for drinking in the morning.
In 2007, the winery hired Philippe Delfaut as the general manager. He worked full-time at the winery, and jointly guided with Eric Boissenot, a winemaking consultant from many famous estates. Each vineyard block was fermented separately. The understanding and respect of the Chinese people, coupled with the meticulous brewing process, the high-quality Kirin wine is born from this.
