The production area is located at the southernmost tip of Puglia in southeastern Italy, commonly known as "the shoe root of Italy". The climate is dry and hot Mediterranean. The grapes benefited from the local hot weather, and the flavors, aromas, and sugars were more concentrated. It mainly grows red grapes, among which Negromaro, Primitivo and Malvasia Nera are the main ones, and the style is thick. However, there is Salento IGT Rosso, which is easy to drink and full of fresh water flavor, in Salento, as well as Salice Salentino DOC, a quite famous production area. It is worth mentioning that, in addition to wine, locally produced olive oil is also very famous.

Salento IGT

It can be made from up to 50 grape varieties, and in addition to the above three, other native Italian varieties (Sangiovese, Montepulciano, Pinot Grigio) or international varieties (Cabernet Sauvignon, Merlot, Chardonnay) can also be used. Therefore, its style is very diverse, covering red wine (Rosato Salento), white wine (Bianco Salento), pink wine (Rosato Salento), and sweetness from dry to sweet.

Salice Salentino DOC

The local area is close to the Adriatico and Ionian seas, and the cool sea breeze brings a neutral effect to the hot local area. The wine of Salice Salentino DOC must be brewed with at least 80% Negroamaro, and the color is relatively deep. Some wineries choose to produce Riserva wines aged for 24 months. There is Manduria DOCG named after the red soil in the area. Manduria is the first DOCG in Puglia. The red soil is rich in iron, which can make wine with a thicker body and full aroma.

Major Grape Varieties

Primitivo

 

An early-maturing variety native to Croatia, it has a full-bodied, medium-tannin, high-alcohol character, with fruity aromas of ripe blueberries and blackberries, as well as fresh fig flavors. It is often brewed locally as a sweet red wine. Not limited to Salento, it is common in the whole Puglia production area.

 


Negroamaro

 

The wine is as full-bodied as Primitivo, with aromas of ripe plums, raspberries and cinnamon, and is often made into red and rosé wines. Alcohol can reach 13.5-14.5 degrees.

 


Malvasia Nera

 

It is a dark-skinned variety of the Malvasia family that is widely used in different types of wines. Malvasia Nera makes light to medium-bodied wines with flavors of cherry, plum and chocolate, and is often blended with the aforementioned Negroamaro.
