Tasting Notes: Unbelievably fruity... thanks to the appassite winemaking method, derived from Amarone's technique of air-drying the grapes, giving the wine an insane concentration. The wine is deep ruby red with a purple rim. Already on the nose there are rich aromas of dried figs and ripe black pears. The palate exudes complex fruit flavors such as surging dried cherries, dried cranberries, red plums, blueberry jam, and broccoli; the explosive fruitiness in the middle section runs through the entire tasting process, as if chewing juicy raspberries and ripe plums. Because it has been aged for 6 months in oak barrels, the overall taste will not be out of balance and only focus on the fruity aroma. The aftertaste of licorice, black chocolate and black olives in the follow-up end is fascinating. The texture of licorice and the mutual cooperation of fruits are fascinating.

The grapes lose their moisture, and the grapes gain insane concentration at the same time. After air-dried grapes lose 30% to 40% of their water, the amount of grapes used to make air-dried wine is about twice that of ordinary wine, because after air-dried, the juice content in the grapes has been concentrated to a relatively small amount, but brewing The aroma of the wine that came out is even more intense and rich, the wine is full-bodied, and the tannins are multi-layered.

Another technique was chosen for Masso Antico Primitivo Appassite 2019, inspired by the special climate of Salento. A small independent island with rugged terrain, a hot climate, and little wind and rain, the peninsula of Salento is sandwiched between the Adriatic and Ionian Seas. The sea breeze blowing helps the grapes to dry naturally. In this case, vite ad alberello is a traditional viticulture method formed to adapt to the terroir of Salento. It is cultivated in a low bush style, and the vines are pruned into 6 branches. Squat for hand picking. There are more than 5,000 farmers in Pantelleria who practice this vine-growing method that has been passed down from generation to generation. The Italian vite ad alberello cultivation method was inscribed on the Intangible Cultural Heritage List in 2014.
