Vivaltus is the expression of perfection every step of the way. With dedication, passion and care. The name "Vivaltus" is an acronym for "life" and "height". It reflects the winery's special location at high altitude and its oenological purpose of enhancing life through wine.
Creation of Vivaltus
Ramón Martínez, Jesús Yllera and José Yllera; three men with a long family winemaking tradition who came together in the 80s to take on the challenge of collaborating on Vivatus in the spirit of doing something different and better in the Rueda region . From some of the highest vineyards (1000m above sea level) and oldest vines (80-100+ years old) owned by the famous Yllera family in Ribera de Duero, currently leading the winery team are brothers Marcos and Carlos Yllera, with Ramón's Children: Beatriz, César and Montxo Martínez, who is also a winemaker.
The winery has high-altitude vineyards, up to 1,000 meters above sea level, which can provide grapes with a cool growing environment, which is conducive to the accumulation of grape flavor substances and fruity aromas, and can also give wines wonderful acidity and provide more flavors.
The winery's trees are 80 to 100 years old and grow on sticky clay and limestone soil. "Old vines" grow with age, and while the fruit yield declines, it is generally believed that the grape flavor produced will be more concentrated, full-bodied, and richer. The best complexity, because the same nutrients only need to provide a smaller amount of grapes. Moreover, "old vines" take root deeper and can absorb water and nutrients from lower layers of the soil, so they are better able to resist drought and can produce grapes with more stable quality in different weathers and years. It also generally does not have the bitterness of immature tannins.
Petrus winemaker Jean Claude Berrouet as consultant
The winery invited Chateau Petrus to join the winemaking team. Jean-Claude Berrouet was a French winemaker known as the "great genius" of oenology. He is particularly famous for his work at Chateau Petrus, where he worked for over forty years.
