Introduction: The second work in the Akashi Gem series is hand-blended by Toji, the sake brewer of Eijima Brewery, using carefully selected sherry and bourbon barrels matured for 3 years. Eijima Brewery was officially founded as a joint-stock company by Bokube Hyokichi in 1888. His family's history of sake brewing in the sake-producing town of "Nada" can be traced back to 1679. In 1919, he obtained Japan's first whisky-brewing license and began to experiment with brewing his own style of whisky. Benefiting from the mild and dry climate of the Seto Inland Sea, the water source of the famous Rokko Mountains and hundreds of years of sake brewing technology, this Akashi single malt shows the characteristics of pure Japanese whisky, and feels the personality and complex and rich flavor given by the terroir and the mature oak barrels.
There are only 8 Japanese whisky distilleries in Japan, and Ei Shuzo was established in 1888 in Akashi City, Hyogo Prefecture. Since its establishment in 1888, Ei Shuzo has been brewing sake and shochu. It obtained a whisky manufacturing license in 1919, becoming the first brewery in Japan to obtain a whisky license.
