【Glory Chrysanthemum Brewery】



Located in Saga Prefecture, Japan, "Koei Kiku Brewery" was formerly known as "Aise Brewery," founded in 1871. This historic brewery sadly closed in 2006. After 13 years, it finally revived in 2019, restarting sake production under the name "Koei Kiku Brewery." Collaborating with Mr. Katsuaki Yamamoto, the renowned sake brewer known as "Kikutaka," they reflected Saga's local characteristics and their determination to start from scratch in their brewing.

Unconstrained by existing concepts like "Kimoto" or "Yamakai," they focus on "natural lactic acid bacteria sizing," creating sakes that balance umami and acidity for food pairing. This has paved a new path, quickly capturing a significant share of the Japanese sake market and securing a top ranking. Their strength is undeniable; Japanese magazines have even described Koei Kiku's rapid rise and remarkable success as "shining like a comet," making their promising future highly anticipated.
