I'm no expert | but I do love my steak
Steaks come in many varieties: Korean beef boasts rich, meaty flavour | Wagyu excels in marbled fat aroma | Hong Kong-style steak is all about nostalgia and “tenderising powder” + MSG
I believe no one would disagree.

Thus, not every steak pairs perfectly with French wine. Tonight I bought a Kyushu Wagyu sirloin.
Wagyu boasts abundant marbling, while most French wines are medium-bodied. Even the robust, full-bodied wines of Pauillac might struggle to withstand the impact of Wagyu's fat content.
They'd be utterly overwhelmed by the fat like a tsunami.

In contrast, the freshly opened 2022 Sangiovese DOC from Romagna, Italy
boasts an exceptionally robust, dried-fruit profile. Such intense fruitiness typically demands bold flavours to balance it.
This wine carries rich jammy notes, complemented by smoky, leathery, and toasted spice undertones, preventing the fat from tasting monotonous.

Simply pan-frying two steaks without wine fails to elevate the meat's character. After two portions, the overwhelming richness of the beef fat becomes cloying, leaving one increasingly sated.

Smooth tannins lead to a long, lingering finish that leaves a lasting impression. Ageing: Partially matured in oak barrels to develop deeper flavours and introduce subtle oak nuances.



Characteristics: The two lines that wrap around the bottle convey energy, elegance and authority. Hence the name, Austo. The abbreviation of Austero ("Austere") is intended to emphasize the characteristics of simplicity, rigor, dignity, elegance and uniqueness. Austo expresses the image of Terre Cevico and its identifying values, which are reflected in this project, represented by its characteristics of exclusivity, elegance, quality and craftsmanship. Austo arose out of our desire to highlight Terre Cevico's winemaking project in a truly one-of-a-kind bespoke bottle



Vinification technique: Chardonnay grapes are lightly pressed and then fermented in stainless steel tanks. The wine is aged in oak barrels before being bottled.

Terre Cevico was founded in 1963 as a cooperative in Romagna and sold wine in bulk throughout the 70s. 【Rubicone IGT 



Rubicone IGT The Rubicon River region is located in the Emilia-Romagna region of central Italy. This IGT was established in 1995, with a total vineyard area of about 4,146 hectares and an annual output of 5,819,000 boxes. The wines produced are red wine, white wine, sparkling wine and dessert wine. Rubicone IGT places great emphasis on varietal wines.
