Founded in 1860, Champagne Ayala is a testament to the vision of its founders and the commitment to quality and innovation maintained over generations. In the heart of the famous Champagne village of Ay, Ayala has been renowned for innovation and quality since its creation. In 1865, five years after its founding, Ayala made a bold move that set it apart in the Champagne world. At a time when Champagne typically used more than 150 grams of sugar per liter, Ayala launched a Brut Champagne with just 21 grams of sugar per liter. This pioneering step underscores the winery’s commitment to purity and elegance. Since then, the winery's reputation has grown rapidly. In 1882, Ayala became one of the founding members of the Confédération Champagne 1882, cementing its place among the elite Champagne producers. At the beginning of the 20th century, Ayala reached new heights and received a Royal Warrant from King Edward VII in 1908.

Acquired by the BOLLINGER family in 2005, the sleeping AY production area restored its former glory. The construction of a new winery in 2007 equipped the winery with modern winemaking tools to meet the ambitions of Champagne AYALA wine quality. The redeployment to the international stage has been successful. Hadrien Mouflad was appointed Managing Director in 2012 with the mission of accelerating AYALA’s growth in France and internationally. The style of Chardonnay wine was confirmed. The brand's image has been completely rethought, and the design of the new label is inspired by the brand's historical principles. Successfully invested heavily in vineyards and cellars. For ten years the winery has been working with great precision to develop the uniqueness and quality of its cuvées and to solidify the pillars that form AYALA: the pure expression of Chardonnay, the unique diversity of its specialties, custom blends, reserve wines.
