Test Notes: Amarone's first impression is sweet, but this one is relatively less sweet, with just the right amount of acidity that brings out the overall character of the wine. It's not cloying, and you can easily drink several glasses without feeling overwhelmed – truly a guilt-free experience. I think this is related to the altitude of the vineyards, which is 150-450 metres. It's more elegant and not too Jammy. The mid-to-high aromas are: dried flowers, strawberry, predominantly red fruit, followed by chocolate, toffee, and mint after some aging...
However, drinking Amarone really requires some patience. I let it decanted for a full 3-3.5 hours before it reached its full potential.
Unsurprisingly, it has a medium-high body, tannins, and intensity. The aftertaste of over 12 seconds was very memorable. The palate is chocolate, dry bromelain, straight like raisins, with some earthiness and licorice notes, creating a very complex flavor profile. This 2018 Amarone is great to enjoy now, and it will definitely be excellent after aging for another 3, 5, or 7 years!



Cantina Valpolicella Negrar, established in 1933, is a renowned winery specialising in crafting premium Amarone red wines. It steadfastly adheres to traditional winemaking methods to distil the finest vintages, employing purely natural processes to enhance richness and complexity of flavour. It is widely regarded as the ideal introduction to experiencing the authentic taste of traditional Amarone. While the appassimento method typically produces sweet wines from dried grapes, Amarone employs Italy's unique appassimento technique. This results in a distinctive flavour profile characterised by a rich, mellow palate, a lingering finish, and remarkable complexity. Fully ripened, healthy grapes are harvested around early September. They are then laid out on bamboo racks, trays, platforms, or wooden crates for low-temperature drying lasting approximately 100 days, sometimes extending to six months or more. This process causes the grapes to lose 30-40% of their moisture content, achieving an optimal balance between acidity and sugar levels. This yields a more complex, concentrated flavour profile. yielding darker-coloured wines with abundant tannins, a rich, full-bodied texture, and an intense bouquet. The wine is then aged in wooden barrels. As the dried grapes have a higher sugar concentration, fermentation yields an alcohol content of 15% to 17%. This concludes the entire Appassimento drying process.



Amarone, meaning “bitter” in Italian, employs the Appassimento (dried grape) method of winemaking, wherein grapes undergo prolonged drying before pressing and fermentation. Following 3-4 years of barrel ageing, Amarone attains DOCG classification, ranking among Italy's most celebrated wines. It stands as one of the five prestigious Italian wines known as ABBBC (Amarone, Barolo, Barbaresco, Brunello di Montalcino, Chianti).



Amarone production using the dried vine method carries significant risks. Fermentation slows as water content decreases, while damp weather during harvest may cause grape deterioration, thereby increasing the risk of spoilage and potential defects. In cooler climates such as Valpolicella, where sugar accumulation occurs at a slower pace, winemakers must separate grape bunches to enhance air circulation and sunlight exposure. This facilitates moisture evaporation, accelerating grape ripening. Yet it is precisely this intricate winemaking approach that yields the prized wine of northeastern Italy.
