what is Appassimeto?
Healthy, ripe grapes are harvested and then laid out to dry either on mats exposed to sunlight (common in southern regions) or on racks within well-ventilated rooms known as frutti. The drying period may range from several weeks to six months, depending on climatic conditions and desired style. This process causes the grapes to lose approximately 30% or more of their moisture content, thereby concentrating their sugars and flavour compounds.

Appassito is a dried grape production method akin to that employed for Italy's renowned Amarone. The drying process involves naturally desiccating freshly ripened grapes. This is achieved by leaving them on the vine for late harvesting, then placing them on wooden racks in well-ventilated rooms. Natural breezes draw out moisture, dehydrating the grapes into raisins. This concentration process refines the grape juice, significantly enhancing both sugar content and fruit character.
After losing 30% to 40% of their moisture, the grapes used for drying-processed wines require approximately double the quantity compared to standard wines. This is because the juice content within the grapes becomes highly concentrated during drying. The resulting wine exhibits intensely rich aromas, a full-bodied structure, and multi-layered tannins.
