The Castello della Sala has a rich history: built in the Middle Ages (1350) by the noble family of Angelo Monaldeschi della Vipera, it bears witness to the family conflicts that dominated the important city of Orvieto in the 14th and 15th centuries, a period when it was a very small town but held great importance. Orvieto remained under papal rule until 1860 (at the time of the Unification of Italy), and from 1516 to 1860, the castle was also one of the church's many properties. Back in modern history, when Antinori, Italy's premier wine family, acquired the historic Castellodella Sala estate, they continually sought to fully leverage the unique terroir of Umbria, striving to create Italy's finest wine. After years of hard work, they released the first vintage, Cervarodella Sala 1985, in 1987. This culmination of the Antinori family's centuries-old winemaking heritage and creativity, its exquisitely refined and elegant texture and rich, layered depth practically redefines the standard for Italy's finest white wines. Unanimous acclaim has not only solidified Cervaro della Sala's status as Italy's leading white wine, but also rivals its global peers, firmly placing it among the greatest white wines of our time.

The vineyard covers approximately 170 hectares, primarily planted with white grape varieties, including Trebbiano (called Procanio here) and Grechetto, as well as international varieties such as Chardonnay, Suavignon Blanc, Sèmillon, and Pinot Blanc. Pinot Noir is an exception; it's not a common grape variety in central Italy, but it thrives here due to the unique microclimate, which allows for significant temperature swings between day and night.
Cervaro della Sala has won numerous awards, including the coveted "Three Glasses" award from the renowned Italian wine magazine Gambero Rosso. The palate is rich and varied, with fruity aromas like pear and fresh pineapple intermingled with vanilla, offering a noble and delicate flavor. This wine is perfect for drinking now, but will become even more refined with 3-5 years of aging, and can age for up to 15 years.

Classic Burgundian style. On the nose white chocolate, pink grapefruit, lemon zest and white flowers. Full-bodied, it shows weight, vibrancy and tension, with a silky texture and a salted citrus finish. Amazing balance in this vintage, with lemon peel bitterness in the aftertaste adding an extra dimension.
