Their hard work quickly paid off, and in 1988 they won a medal at the Seine River Bar Division Competition. In 1998, the children of Annie and Jacques completed the study of viticulture and oenology. The vineyards carefully plant every plant in order to harvest healthy and pure grapes. Four to five weeks before harvest, start to check the ripeness of the grapes. These grapes are only harvested when the ideal balance between acidity and sugar is reached. In the wine cellar, all wines are placed separately according to the place of origin, and pressed and brewed at the same time, and each different wine is obtained due to the different wooden barrels used. Lightweight filtration is carried out to respect the aroma of the wine, and each production step is controlled to produce the least amount of waste. Pinot Noir grape is one of the most popular grapes in the world. This small grape matures later, which can produce delicate aroma, rich and substantial wine quality, easy to drink, and slightly almond flavor. Pinot Noir belongs to Eurasian species, medium early maturity, small ears, conical shape, dense or very compact fruit kernels, medium-sized fruit kernels, nearly round, purple-black, medium-thick fruit powder, thin skin, and sugar content of 160~200g/ L, acid content 6.0~10g/L, juice yield 70%~75%, sweet and sour taste. Pinot Noir is the queen of precious red grapes, which can produce the most memorable and unique red wine in the world. Pinot Noir grapes are usually made from a single variety and are rarely mixed with other grape varieties. These grapes are used to make champagne or high-quality sparkling wines, which act as a skeleton and increase the ageing potential of this type of wine.
