Tasting notes : Deep ruby red in color, with aromas of ripe black cherries, plums and a hint of cedar wood, and ripe, sweet fruit, strawberries, carrots, blackberries, with floral notes. The palate is rich and complex, with well-balanced tannins and a long finish with hints of vanilla and spice. Flavors of roasted almonds and cherry jam linger on the finish.

Food Pairing: This wine is an ideal accompaniment to rich meat dishes such as roast beef, lamb or game. It also complements rich cheeses and complex sauces.

Tasting Advice: For the best taste, it is recommended to drink at 16-18°C. We recommend that you allow the wine to mature for about 30 minutes to allow the aromas to fully release. The cool and humid climate of the 2021 vintage made the winemaking process even more demanding, with the winemakers paying extra attention to extracting fine tannins and preserving acidity to ensure that the wines have a beautiful structure. The Bordeaux region benefits from a temperate maritime climate, regulated by the Garonne and Dordogne rivers, which provide ideal conditions for the ripening of the grapes.

A most-delicious blend, Château Cabos is primarily velvety, plum-rich Merlot. Bordeaux’s most popular grape variety, Merlot accounts for a whopping 65% of plantings across the region and it thrives in the silty, clay soils of the Right Bank, near Rauzon. A healthy slug of Cabernet Franc completes the picture by adding depth, firmer structure, and vibrant, red-fruit characters.

Densely textured, this young wine exudes black fruits alongside vibrant acidity. Background tannins are already softening.
